I have to say that my favorite brand of curry paste is still Mae Anong, even though it doesn't make for as pretty pictures given its grayish hue. But, I'll definitely be more willing to substitute Mae Ploy or Maesri in the future should the need arise.

Garlic.Garlic is essential in making curry pastes. For best results, always use fresh garlic and never powder. Massaman really good as well, but Im still messing with a few things and this great recipe could be my answer to what I seek. Several years ago, I had the chance to learn to make this recipe, and I was surprised to find that massaman curry is actually really easy to make.

Massaman curry from Thailand has a mix of Malay, India, and muslim nation flavors, and it's often served with potato (see recipes below, massaman is also a wonderful part of Thai peanut sauce).
