Carrots can be preserved in many ways, which is why they’ve been, and have remained, such an excellent addition to the home vegetable garden. They can be stored in the refrigerator after washing. Carrots will lose moisture in most refrigerators because the humidity is relatively low. Store the carrots in a plastic bag or in the high humidity drawer of your refrigerator. Unique mixed combination of colour and taste sensations sure to excite and delight at the dinner table. Purple has smooth skin and coreless orange flesh which is very sweet and tasty—especially striking when sliced. Yellow holds its bright sunny hue inside and out, is extra crunchy and juicy and has a wonderfully refreshing sweet flavor. White is very mild and especially delicious when young and Red has very high lycopene levels as well as a crispy texture that is great cooked. Cultivation advice Carrot Rainbow Mix This small, round variety is ready to harvest in 58 days and has excellent color. Harvest when the root is the size of a 50 cent piece. ‘Thumbelina’ When the carrot seedlings are large enough to handle they will need thinning out. This is best done in stages. For the first thinning aim to leave one seedling every 2 to 4cm, pulling out any in-between. About four weeks later thin again to a final spacing of 10cm or 4inches, for finger or baby carrots a final spacing of 5cm will be adequate.

This versatile and straightforward dressing can be used in any leafy green salad or roasted root vegetables like beetroot or parsnips. Did you know that you can also eat the tops of carrots? Carrot leaves, or greens, are nutrient-dense and delicious. I use them to make a fresh pesto or chop them finely into a chimichurri sauce. Meanwhile in East Asia, the carrot was being cultivated and crossed there as well. The cultivation of these two types of the same species has led to two categories of carrots: The most distinctive colour range yet produced. Yellow, White, Purple, Scarlet and Orange Carrots. Refreshingly different for main meals and we invite you to give them a whirl although we have to add, they are no more beneficial to the eye-sight than the orange ones! How to Grow Carrots from SeedCarrot seeds are easy to plant, so there’s no need to get anxious. But if you want everything to go smoothly, it is best to have all of your supplies ready first. Because they are a cold weather, hardy crop, carrots are often the first thing to be planted. They can be planted 2-3 weeks before the last frost. Seeds should be planted shallowly, with just 1/2” of soil covering them. Plant them 1-2 inches apart, with 10 -12 inches between each row. For this mix we selected five classic names in carrots. All of these varieties except one (Bambino) are traditionally full-sized carrots, but are suited for early harvest as baby vegetables. Their flavor and texture matures early, so you get the full "carrot" bite in delicious miniature form. A basal rosette of leaves forms during the first year, and the plant will remain like this until bolting in the second year when it sends up a flower stalk that can reach up to 3 feet tall. Temperatures must be under 50⁰F to induce flowering, and if harvesting the roots to eat then bolting is undesirable.

Growing carrots from seed is amazingly easy and fun. With no need for transplanting or starting the seeds indoors, it really takes the burden out of planting them. Early sowings may benefit from some protection, and seedlings should be thinned gradually to around 10cm.To match with the roast lamb we were having for dinner, I wanted to create a roast vegetable dish but not too heavy. So when I saw colourful heirloom rainbow carrots, I knew what I was making to match. White Satin (70 days)– White Satin is a fast-growing carrot with creamy white roots and green shoulders. The tops are tall and grow up to 18”, but can break off when pulled. I therefore prefer to lift the roots from the soil with my garden fork. Expect a bumper crop of 8 to 9” long carrots that are very juicy and lightly sweet. Great for juicing. Purple Sun (78 days)– If you’re looking for a purple carrot with dark purple color all the way through, plant Purple Sun. The roots are 8 to 10” long, smooth, and tapered. The plants have strong, vigorous tops and this variety is bolt tolerant, holding its quality for a long period in the garden. Carrot seeds are small, brown, and light in weight. Moisten the soil before planting and sow the seeds in rows. Cover the seeds with a ¼ inchof light, loose soil to prevent the seeds from floating or blowing away. Space your carrot rows12 to 18 inches apart, and sow the seeds about 1 inch apart in the row. Malbec (70 days)– Malbec is a beautiful, early maturing red carrot with blush-colored roots that are often purply towards the tops. This is a vigorous variety with roots that grow up to 10” long and strong, tall tops. The flavor is crisp and sweet.

Flavour wise, I have kept it simple with roasted rainbow carrots as I want the natural flavours of the produce to shine through. When youthink of the modern cultivated carrot plant, what comes to mind? Instantly, images of long, tapered, orange roots with ferny foliage may surface. However, did you know that carrots weren’t originally orange? Or that carrot varieties can actually be shaped differently? Let’s dive into some carrot history to learn more about these staple vegetables. Wild Roots Carrots we know today were once wildly grown and used medicinally. When the sprouts have grown to about 1-2” tall, they should be thinned vigorously. Because the seeds are so small, it is common, and almost impossible not to, over-plant and have too many seedlings vying for the same space. Carrots need approximately, depending on variety, 1-3 inches between each plant. If they are not thinned enough, you will end up with tiny, thin carrots that are all top and no root. Carrots are best thinned by carefully snipping the tops off the unwanted ones with a small pair of scissors. This reduces the possibility of damage to the delicate seedlings you are going to keep.
